Peanut Butter Cookie Dough Ice Cream Sandwiches

 

Lately my sweet tooth has been out of control. Like crazy. Maybe it has something to do with all the post-baby hormones. Or all the crazy over-the-top desserts that have been trending lately. Crazy milkshakes, ice cream sandwich donuts and rainbow bagels have pretty much taken over my Instagram feed. I’m definitely not short of any inspiration this summer.

This recipe was inspired by my craving for ice cream sandwiches and Reese’s pieces ( my favorite candy ever!). It’s a bit messy but well worth the cleaning up!

So I screwed up a few times during this recipe. Well, I wasn’t patient to be more accurate. I didn’t wait for the ice cream layer and cookie dough to freeze completely and I had a bit of a mess. Don’t be like me. Control yourself. You’ll end up with way prettier ice cream sandwiches than I did. Luckily my ugly ones tasted pretty amazing and I covered up the ugliness with crushed Reese’s pieces. Yum!

You’ll see the mess my impatience caused in the video. Everyone has an off day in the kitchen – it’s all about how you salvage it! My husband said these taste like a super rich frozen Reese’s peanut butter cup and I’d have to agree with him. I might throw one in the blender with some milk and make myself a milkshake later. #YAS

Peanut Butter Cookie Dough Ice Cream Sandwiches


  • Total Time: 30 minutes
  • Yield: one 8x8 pan 1x

Ingredients

Scale
  • 1/2 cup unsalted butter, semi melted
  • 1 cup brown sugar
  • 1 cup crunchy peanut butter
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup mini chocolate chips
  • 1 quart of vanilla ice cream,softened


Instructions

  1. In a large bowl, whisk together butter and brown sugar until smooth.
  2. Add peanut butter and vanilla. Mix well. Add flour and mix well. Mix in mini chocolate chips.
  3. Line a 8×8 pan with parchment paper. Spoon half the cookie dough into the pan and press down into an even layer. The dough is quite sticky so use your hands! Remove the cookie dough by the parchment paper and place on a baking sheet. Freeze for 1-2 hours.
  4. While the first layer of cookie dough is freezing, lay another piece of parchment paper on the bottom of the 8×8 pan and evenly spread out the rest of the cookie dough. Spread the softened ice cream onto the cookie dough. Grab the cookie dough sheet that in the freezer and place on top and gently press down. Freeze overnight!
  5. Cut into ice cream sandwiches into squares. You can press the sides of the sandwiches into sprinkles or chopped Reese’s pieces if you’d like. Wrap in parchment paper and place in an air tight container and freeze the leftovers (if there are any!)

    1. hey they make 9 large bars but you can cut them smaller and you can get about 18 bars.
